Father's Day Carrot Cake

Ingredients:

• 2 cups of sugar
• 2 cups of flour
• 2 teaspoons of baking soda
• 1 teaspoon of salt
• 3 teaspoons of cinnamon
• 1 1/2 cups of vegetable oil
• 4 eggs
• 3 cups of grated carrot
• 1 cup of chopped nuts, optional
• 1 teaspoon of vanilla

• Sift together the sugar, flour, soda, salt and cinnamon. Stir in the oil.
• Add the eggs, one at a time, mixing well after each addition.
• Add carrots, nuts, and vanilla, mixing thoroughly.
• Pour into a floured and greased 13 x 9 x 2 inch cake pan.
• Bake in a 350ºF oven for 30 minutes. Cool in pan.
• Spread with Cream Cheese Icing.

• One 8 ounce package of softened cream cheese.
• 1/4 c softened butter
• 2 tsp. vanilla
• 1 lb. pkg. powdered sugar
• Beat together cream cheese and butter until smooth. Blend in vanilla. Sift powdered sugar. Gradually beat together powdered sugar and mixture.
